The Food salt meter SSX-210 is used to measure the salinity in semi-solid food such as meat, sausage, cheese, salads, etc. In this case the food salt meter measures the electrical conductivity depending on the salinity. It is important that the medium, which is supposed to be measured, contains parts of water. Consequently, the food salt meter cannot perform a salt measurement in pure oil (contains no water). Each meal requires a specific salinity for its individual flavour. But the taste is always different, thus the user needs to arrange his own salt table. If for example a value of 86 is measured by the salt meter within the production of ham with a optimal flavouring, the ham can be treated in the further production, until this value is reached. The displayed values cannot be transferred directly, because the salinity depends on the composition of raw materials and recipes. Therefore one obtains a relative value, which depends on the recipe when measuring sausage-mass with the food salt meter SSX-210. This relative value can be used in future productions of the same products as the debit value. Further, one should consider that not only salt is measured, when using vinegar and acids, because these increase the electrical conductivity.
